We stopped by Coolhaus walking to and from ACL this year. I got coffee toffee ice cream (literally) sandwiched between two snickerdoodles. It was AMAZING! I can’t wait to visit again, but their normal location is a little inconvenient to get out most nights. But trust me, this place is killer. And they let you sample the ice creams to make sure you find the right one.

For the uninitiated, you walk up, choose the type of cookie you want, and then the flavor ice cream, and then they make your ice cream sandwich to order. It melted fairly quickly, so next time I would get it served in a cup, which is something they offer.
